Allen Oliver's Professional Seasonings are the result of his years devoted to the food service industry as Chef & Owner of restaurants in Texas and Louisiana, consultant/designer of food facilities and a long tenure with the premier builder of barbeque equipment, J&R Manufacturing, Inc
Mr. Oliver savored the many varieties of barbecue offerings across the American continent. Capturing the subtleties of the flavors and tastes he experienced, he formulated these uniquely different and delicious seasonings that are now available to food service professionals.
During his life, he was a renowned authority on barbecue, Allen Oliver was labled the "Barbecue Evangelist" by Dallas "D" Magazine. He is the author of the cookbook, "How to Barbecue, Grill and Spit Roast," for J&R Mfg. He served on the board of directors of the Texas Restaurant Association and was also the inventor and patent holder of the remarkable Ros O Bake Gourmet Baked Potato machine.
Culinary Institute of America graduate, Brad Johnson, first met Allen Oliver when they were developing the unique spices for his restaurants. After the spices were perfected, he began studying blending under the tutelage of Allen Oliver, eventually taking over the Allen Oliver Group.
He is currently blending spices for the industry's leading restaurants and casinos across the country and will blend the spices that can make your establishment stand out. Chef Brad works closely with you to develop a custom blend of spices for your specific needs. You can also utilize his signature blends that are favorites among our current clientele.

Mixed herbs & spices blended just right, for the backyard rotisserie or grill. The best chicken seasoning “ever”! A tablespoon sprinkled on a whole bird-can be roasted in the oven or even slow cooked in the smoker. Awesome! 5.25oz per jar.

Beef Rub $4.99
This mix is the result of years barbecuing Texas' favorite cut of beef...Brisket of Beef! The rub is highly concentrated and is to be used very sparingly; only 2 ounces or less per 12 pound brisket. It is also wonderful to use on beef ribs and all other cuts of beef. A teaspoonful will spice up an entire pound of ground beef--hamburger fantastico!

Blackening Seasoning $4.99
Straight from the bayous of Louisiana. There is nothing better for redfish or any fish. Cook in the cast iron skillet or on the grill and you will please a crowd. Sprinkle lightly for a little heat or add a lot for that true “Louisiana” flavor. 4oz per jar.

Branding Iron Rub $4.99
This mixture was originally designed to spice skirt steak for Fajitas, however, it is now being used for many other purposes. Lightly rubbed on turkey breast prior to cooking; sprinkled on chicken wings; grilled steaks; add to beef stew or hash. A mighty nice all-purpose seasoning with a bit of campfire flavor, it's a must in every professional kitchen. 4.5 oz per jar.
